Chocolate, nuts and oats taste delicious with aronia.

Substitute aronia for cranberries in your favorite recipes.
To sweeten with less sugar or substitutes, mix aronia with other fruits.

Fried Noodles with PeanutAronia Sauce

2 pkg. instant ramen noodles
2 tsp Canola
2 tsp ginger
1/4 cup peanut butter
2/3 cup milk
2 tsp honey
2 Tbsp lemon juice
1 cup dried sweetened aronia berries
1 Tbsp Canola
1/2 cup carrots, slivered
1 cup cabbage, thinly sliced
1/2 can water chestnuts
1 flavor packet (from instant noodles)
onion salt to taste
pepper to taste
poultry, beef, or seafood, cooked and sliced or cubed mandarin oranges, optional

Boil noodles for 3 minutes. Prepare sauce in another pan. Mix thoroughly and cook next 7 ingredients at medium-low heat. Simmer on low 10-15 minutes. Stir occasionally and thin with additional milk if sauce becomes too thick. Keep warm. 

Heat Canola on high in frying pan. Toss in carrots and cabbage. Stir fry for 1 minute. Sprinkle 1 flavor packet from ramen noodles, onion salt and pepper. Lower heat slightly. Add drained noodles and water chestnuts, and meat or seafood. Continue stir-frying until warmed through. If desired, stir in mandarin oranges; heat lightly. Serve with sauce on top. 

Variations: Omit onion salt and incorporate sautéed onions. Season with curry powder and soy sauce. Replace black pepper with cayenne pepper.

Chick-a-Boom Aronia

rice, cooked
chicken, microwaved and diced
chicken broth, reserved
minced onion
dried sweetened aronia 

While cooking rice, microwave chicken pieces.Freeze the broth. In a large skillet, stir and hea trice, chicken and minced onion. Season with salt and herbs. Skim fat from broth. Stir and heat broth in the mixture. Fold in dried sweetened aronia.


Chocolate Crackles

1 12-oz. package semi-sweet chocolate morsels
1 2/3 cup Cheerios or Spanish peanuts
1/3 cup Coldbrook Farm dried sweetened aronia berries 

Stirring frequently, melt chocolate chips over low heat. Remove from flame and coat Cheerios or Spanish peanuts with melted chocolate. Fold in dried sweeetened aronia berries. 

Drop by teaspoonsful on wax-paper lined cookie sheet. Refrigerate until solid.


The Original Enrobed Aronia

Coldbrook Farm dried sweetened aronia berries
Callebaut Classic Coating (milk or dark chocolate)
wooden toothpicks

Melt chocolate in a saucepan on low heat while stirring constantly to avoid scorching. Place aronia berry on a toothpick. Rotate it on its side while evenly coating. To cool drip-free, poke the toothpick upright into banana.

Chocolate Whispers

4 oz Ghirardelli 70% Cacao Premium Baking Bar
Coldbrook Farm dried sweetened aronia berries
small nut pieces, optional

Melt baking bar in heavy saucepan on very low heat. Stir continuously to avoid scorching. In individual candy cups, put 7 aronia berries and, if desired, 2 nut pieces. Cover with melted chocolate. Refrigerate until solid, about an hour.

Variations: Stir your favorite extract, such as banana or orange, into the melted chocolate. Or add a hint of cinnamon. Make aronia nut clusters by stirring berries and nuts into melted chocolate.

Drop into candy cups and refrigerate until solid.

CinnAronia Bar
The Ultimate Aronia Granola Bar

7/8 cup raw old-fashioned oats
2 Tbsp whole wheat flour
3/4 tsp cinnamon
1/6 cup brown sugar, packed
1/4 cup pepitas
1/4 cup sunflower seeds
1/2 cup Coldbrook Farm dried sweetened aronia berries,
1/4 cup dried cherries
1/4 cup dried apricots, diced
1/3 cup Nestle's semi-sweet chocolate mini-morsels
2 Tbsp Canola
3/8 tsp vanilla extract
1/4 cup honey

In medium-sized bowl, mix thoroughly the first 3 ingredients and the brown sugar, broken up. Stir in seeds, dried fruits and chocolate chips.

Blend the remaining ingredients in small bowl. Drip over the granola. Stir to coat evenly.

Place on parchment-lined cookie sheet. Press into a rectangle until flat. Bake at 325° for about 20 minutes, until golden. Cool before cutting.

5-Star Aronia Trail Mix

1 Tbsp Coldbrook Farm dried sweetened aronia berries
2 Tbsp dried cherries
2 dried apricots, halved
2 dried apple rings, cut in chunks
4 banana chips
1 Tbsp Ghirardelli 60% Cacao Bittersweet Chocolate Premium Baking Chips
1 Tbsp raw old-fashioned oats, toasted
3 Tbsp pepitas

Mix and store in air-tight container until ready to use.

Create your own special trail mix by substituting other ingredients:

Dried fruits strawberries, papaya, mangoes or candied orange.

Nuts (chocolate-covered or plain) – peanuts, almonds, cashews, hazelnuts or walnuts.

Chips – peanut butter or butterscotch.

Yield: 1 cup

Whole Wheat Nibblers

1/4 cup butter or margarine
3/4 cup + 2 Tbsp. brown sugar, packed
1 egg
1/2 tsp vanilla
1 1/2 cup whole wheat flour
1/2 tsp baking soda
1/4 tsp baking powder
3/8 tsp cinnamon
3/8 tsp nutmeg
1/2 cup yogurt, plain
1/2 cup Coldbrook Farm dried sweetened aronia berries

Cream butter or margarine and brown sugar in mixing bowl. Beat in egg and vanilla. Add remaining dry ingredients, blended, alternately with yogurt. Drop by teaspoonful onto greased cookie sheet.

Bake at 375‪° for about 7 minutes. Remove to cool.

Yield: 3 dozen

Corn Cookies

1/2 cup butter or margarine
3/4 cup sugar
2 eggs
1 Tbsp milk
1 1/2 cup flour
1/2 cup corn meal
tsp baking powder
1/2 tsp nutmeg
1/2 cup Coldbrook Farm dried sweetened aronia berries

Blend butter or margarine and sugar. Add eggs and milk; beat well. Add remaining ingredients; mix well. Drop by teaspoonful onto greased cookie sheet.

Bake at 350° until brown on the bottom, about 12 to 15 minutes.  Remove to cool.

Yield: 2 dozen

Aronia Jumpstart

1/2 cup old-fashioned oats, raw or toasted
1/4 cup Coldbrook Farm dried sweetened aronia berries
2 tsp flax seed (for an Omega-3 boost)
1 tsp sesame seed

Combine ingredients. If desired, make in advance and refrigerate in a tight container. Serve with milk.

Variations: Toss in some banana slices, peaches or strawberries.

Aronia Fruit Delight

1/2 cup peaches, sliced
1/2 cup pears, sliced
1 banana, sliced
1/2 cup raspberries
1 Tbsp Coldbrook Farm dried sweetened aronia berries

Mix all ingredients. Serve immediately.

Variations: Substitute cherries for raspberries or sprinkle with coconut.

Aronia Waldorf Salad

2 apples, peeled and chopped
3 Tbsp Coldbrook Farm dried sweetened aronia berries
2 Tbsp dry-roasted sunflower seeds
mayonnaise (fat-free) to taste

Combine and serve as is or on lettuce.
Serves 2


1/2 cup brown rice, uncooked
1 egg
1/4 tsp cinnamon
3 Tbsp Coldbrook Farm dried sweetened aronia berries
2 Tbsp coconut flakes
1/4 cup dry-roasted sunflower seeds,
meat or seafood, cooked and diced

Cook rice. Meanwhile, scramble the egg in a skillet with a bit of Canola. While letting the rice stand, stir in the cinnamon with a fork. When rice is ready, chop egg and add to rice with dried aronia berries, coconut, sunflower seeds and meat or seafood.

Serves 1-2

Turkey, Chicken or Beef Curry

1 cup brown rice, uncooked
leftover turkey, chicken or chuck, cubed or diced
leftover broth
1 Tbsp curry powder
6 Tbsp Coldbrook Farm dried sweetened aronia berries
1/4 cup coconut flakes
2 Tbsp hulled pumpkin seeds

While cooking rice, chop meat. Make sauce with leftover broth. Add curry powder. Toss in dried sweetened aronia berries, coconut and hulled pumpkin seeds. Serve on steaming rice.

Serves 2-3

VegAronia Shuffle

cabbage, sliced
carrots, sliced or cut in strips
broccoli florets, with stems diced
cauliflower florets, with stems diced
red bell pepper, diced
water chestnuts, sliced
onion, diced
butter substitute (optional)
sesame seeds
Coldbrook Farm dried sweetened aronia berries
spices and herbs of choice, including pepper and chives
no-sodium soy sauce (optional)

In large skillet, stirring occasionally, simmer vegetables for about 15 minutes or until almost done. If desired, blend in butter substitute for extra flavor. Stir in sesame seeds and dried sweetened aronia berries. Season with pepper, chives, and other herbs and spices. Serve with soy sauce, if desired, or accent with Ying's (all-natural) Kungpao Sauce.

Tangy Chicken Salad

leftover chicken, diced
sesame seeds
Coldbrook Farm dried sweetened aronia berries
herbs of your choice
salad dressing

For an instant lunch, place salad greens on a plate. Mix all remaining ingredients except salad dressing. Place them on the greens. Pour your favorite dressing over all.

CheezAronia Bites

crackers, low-sodium, low-fat
Coldbrook Farm dried sweetened aronia berries
mozzarella cheese

Place several dried sweetened aronia berries on each cracker. Drizzle melted mozzarella cheese over fruit.

Variation: For an open-faced sandwich, substitute toast for crackers. Spread dried sweetened aronia berries evenly on toast. Cover fruit with mozzarella cheese, sliced. Broil or microwave until cheese melts.

Antioxidant-Rich Stuffing

corn bread, cubed
whole wheat bread, cubed
white bread, cubed
butter substitute
herbs to taste

Melt butter substitute in a saucepan. Toss in bread cubes, Beginning with sage, season with your favorite Thanksgiving herbs. Stir gently. Fold in dried aronia berries, sweetened. Stuff a bird or serve as is.

Wake 'Em Up Carrot Salad

carrots, grated
Coldbrook Farm dried sweetened aronia berries
fat-free mayonnaise
dash of cinnamon
your favorite unsalted seeds or nutmeats

Mix first five ingredients to taste. Serve on lettuce.


ChocAronia Bark

1 12-oz. semi-sweet chocolate bar
cup walnuts, chopped
3-4 Tbsp Coldbrook Farm dried sweetened aronia berries 

On low heat, stir chocolate in saucepan until melted. Remove from heat. Stir in walnuts, then aronia berries. 

Pour onto wax-paper lined cookie sheet or baking pan. Spread the mixture so it’s as thin as possible. Refrigerate until solid, about an hour. 


ChocAroon Wedges

3 squares unsweetened chocolate
1/2 cup butter or margarine
3 eggs, slightly beaten
3/4 cup sugar
1/2 cup flour
1 tsp vanilla
2/3 cup sweetened condensed milk
2 cups coconut, shredded
1/3 cup (generous) Coldbrook Farm dried sweetened aronia berries 

Stirring constantly, melt unsweetened chocolate and butter or margarine on low heat. Stir in the next four ingredients. Pour into greased 9" pie pan. In small mixing bowl, combine last three ingredients. Leaving a 1/2" border, drop the mixture on top of the chocolate.

Bake at 350° for 25 to 30 minutes. Cool. Slice like a pie.

Shrimp Stir-Fry

1 lb. frozen cooked shrimp, thawed
½ cup rice, uncooked
1 diced shallot, optional

Cook rice. Chop shrimp. Blot with paper towels to remove excess water. Heat frying pan, lightly coated with Canola. Reduce heat to medium and braise until excess water evaporates. If desired, add diced shallot. Stir occasionally to allow shrimp bits to brown. Stir in cooked rice. Season to taste with salt and thyme. Fold in dried sweetened aronia.

Serves 2.

FudgeAronia™ Monster Cookies

3/4 cup (of 12 oz.) semi-sweet morsels, melted
cup butter or margarine, softened
1/4 cup sugar
1/4 cup brown sugar, firmly packed
1/2 tsp cinnamon
1/4 cup dried apricots, diced
1 egg

1/2 tsp orange extract
1 1/4 cup flour
3/4 tsp baking soda
1/4 cup sunflower seeds, roasted

1 1/4 cup semi-sweet morsels
1/4 cup dried sweetened aronia

Microwave in a small covered glass bowl 3/4 cup semi-
sweet morsels. In a large bowl, cream butter or margarine, sugar, brown sugar, cinnamon and dried apricots. Add and beat until light and fluffy egg, orange extract, and melted morsels, cooled. Gradually blend in flour and baking soda.  Stir in sunflower seeds, semi- sweet morsels and dried sweetened aronia.

Drop 1/4 cup of batter onto UNGREASED cookie sheet. Flatten with spoon. Bake at 375° about 12 to 14 minutes.

Crisp Cornmeal Waffles

Recipe from Gary & Glorianna Schneckloth
‘Within My Means,‘ by blogger Ellen Treats
makes 4-6 Servings

2 eggs
1 3/4 cups milk
1/2 cup margarine or butter melted, or vegetable oil
1 cup all-purpose flour
1 cup cornmeal
4 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
5 ounces dried (sweetened) Aronia Berries, plus a few more for garnish

1) Preheat waffle iron.
2) Beat eggs with hand beater until fluffy; add milk and melted butter and mix.  Add dried berries to liquid ingredients and allow to soak for about 10 minutes.  Beat in remaining dry ingredients just until smooth.
3) Spray griddle with oil lightly.
4) Pour batter from cup or pitcher onto center of hot waffle iron. Bake until steaming stops, about 5 minutes. Remove waffle carefully.
5) Top with syrup, butter, and a few more dried berries.

Waffles can be saved in a pre-heated 200° oven until served. Leftover waffles can be frozen for use later.
